Sweet Potato Casserole with Marshmallows

The dessert is simple and quick to prepare. Preheat the oven to 190 degrees. Place sweet potatoes in a large saucepan and cover with cold water; season well with salt. Bring to a boil, reduce heat, and cook for 15 to 20 minutes. Drain the water. Cook over medium heat, stirring, until any remaining liquid has evaporated, about 2 minutes. Remove the saucepan from the heat, then add milk, butter, and nutmeg. Beat until smooth, then season with salt and pepper. Transfer the mixture to a baking dish. Top with marshmallows. Bake until the marshmallows turn lightly brown, for 15 to 20 minutes. Serve cooled or slightly warm.
