
Chicken, spaghetti, and mushroom casserole

1. Place the chicken in a pot with water and simmer over medium-low heat for 30–40 minutes. Remove the chicken from the pot and let it cool slightly. Reserve the broth in the pot.

2. Melt 2 tablespoons of butter in a large skillet. Add mushrooms, 1/4 cup of white wine, and season with salt and pepper. Cook over medium heat for 8 to 10 minutes, until the liquid has completely evaporated. Remove the mushrooms from the skillet and set aside.

3. Bring the broth to a boil. Break the spaghetti into three pieces. Add the spaghetti to the boiling broth and cook until done. Remove the meat from the bones and chop until you have 2 cups of meat.

4. Heat a skillet over low heat. Add 6 tablespoons of butter. Sprinkle with flour and stir. Cook for 1–2 minutes. Pour in 2 cups of broth and whisk well. Add milk, up to 1/4 cup of wine, salt and pepper to taste. Cook until thickened. Remove from heat, add Parmesan cheese and stir until smooth.

5. Add mushrooms, chicken, and sliced olives. Mix well. Add cooked spaghetti and mix.

6. Transfer the mixture into a baking dish. Sprinkle with cheese. Bake at 160 degrees until golden brown. Serve with salad and bread.
