
Apricot porridge
Description
This is a great recipe that requires no special culinary skills. Everything is extremely simple. The rice must be washed thoroughly in seven waters. This is what yogis believe. For them (and not only for them), the number 7 is generally considered magical. I don't know about yogis, but well-rinsed rice is definitely the key to properly cooked porridge. And if it's cooked with dried apricots, it becomes a real source of potassium. This moderately sweet porridge is enjoyed by both children and adults. A wonderful addition is ghee (clarified butter), which can be added to taste right before serving. Then the rice porridge with dried apricots becomes exceptionally delicious.

1. Before preparing porridge from dried apricots, it is necessary to thoroughly wash the dried fruit, first soaking it in cold water for 10–15 minutes.

2. Drain the water. Dry the apricots on a paper towel. Cut them into small cubes.

3. Rinse the rice. This procedure should be repeated until the water becomes completely clear.

4. Pour cold water over the rice and place over high heat. Wait until the water comes to a boil with the rice.

5. Then add apricots, vanilla, and salt to the boiling rice. Adjust the taste with sugar. After boiling, reduce the heat, cover with a lid, and cook for 12 minutes.

6. Add a piece of butter. Turn off the heat. Stir. Let the cooked porridge stand, covered, for at least 10–15 minutes. Serve with jam or honey (depending on your preference).
