Grits porridge
Description
As a topping, we will use tempeh—a product made from fermented soy. It can be substituted with mushrooms. Instead of cornmeal, you can use polenta to make the porridge even creamier. Below I will provide a step-by-step description.
Instructions
- 1
Step 1

Prepare all the ingredients.
- 2
Step 2

Pour soy milk into a thick-bottomed saucepan and bring to a boil over medium heat. Add vegetable stock cube and plant-based spread, stirring until completely dissolved. Season with salt and pepper.
- 3
Step 3

Rinse the cornmeal thoroughly, then add it to a saucepan. Mix well. Cook the porridge over low heat for 15 minutes, covered.
- 4
Step 4

Add the grated cheese. Stir and cook the porridge for another 5 minutes, until the cheese has completely melted.
- 5
Step 5

Cut the tempeh into half-centimeter strips. Dip in soy sauce and fry in a pan on both sides until a brown crust forms.
- 6
Step 6

Cut the cherry tomatoes in half, then fry them in a pan.
- 7
Step 7

Cut the fried tempeh into cubes, finely chop the parsley. Add the tomatoes.
- 8
Step 8

Transfer the porridge to a plate, add tempeh, tomatoes, and herbs. The grits porridge is ready.
