Fine-Grated French Fries

Description

A tasty appetizer for any gathering. I used to make this kind of French fries only for the “Grouse Nest” salad, but I always liked how crispy they were and how interesting they looked. They also tasted different—richer and more flavorful. So I thought, why not make them on their own, as a snack or a side dish? I was pleased with the result, and I’m sure you’ll like it too.

    Prepare all necessary ingredients. Peel and rinse the potatoes.

    Grate the potatoes on a fine grater. I use a Korean carrot grater; with it you can make long thin strips.

    Place the potatoes in a deep bowl and cover with cold water. Let sit for 5 minutes, then drain the water and rinse the potatoes well. This helps remove excess starch, so the potatoes won't stick together while frying and will stay loose and fluffy.

    Place the grated potatoes on paper towels folded in several layers. Cover the top with towels as well and pat the potatoes dry thoroughly.

    If you don't have a deep fryer, use a small pot with a deep bottom. Heat vegetable oil in it to 180°C. If you don't have a kitchen thermometer, wait until the oil starts to crackle. Add a small amount of potatoes to the pot and salt them. Cook until golden in color.

    Place the cooked potatoes on paper towels. Fry the next batch.

    The shoestring fries are ready. I recommend serving them with ketchup—it’s very tasty!
