For this dish, it is best to use small young potatoes. Rinse them thoroughly under running water and cut each potato in half, then carefully remove the core from each half using a spoon.

Now we heat olive oil (one tablespoon) in a saucepan and sauté finely sliced mushrooms in it. When the mushrooms are half-cooked, add 4 cloves of minced garlic, ground black pepper, and salt to taste. Mix everything and continue cooking the mushrooms until almost done. At the end, add chopped parsley and simmer for a few more minutes over low heat. Then transfer the mushrooms to a small bowl. Once the mushroom filling has cooled, use it to fill the potato halves.

Add another spoonful of butter to the skillet where the mushrooms were sautéed, then add the chopped shallot and remaining minced garlic. Cook over medium heat for 6-7 minutes until golden. Next, add two tablespoons of tomato paste and grated carrots, and simmer everything, stirring, for another 6-7 minutes. Then add the chopped peeled tomatoes to the skillet. After 3 minutes, add paprika, cinnamon, cumin, and salt to taste, and cook the sauce for another 5-7 minutes. Once the sauce is ready, place the stuffed potatoes into the sauce with the filling side up, making sure the potatoes are not completely submerged.

Cover the skillet with a lid and place it in a preheated oven at 180 degrees for one hour. After that, remove the lid and cook the potatoes for another 10-15 minutes uncovered, then the dish is ready to serve. Sprinkle it with the remaining parsley. Enjoy your meal!
