
Potato accordion with bacon
Description
The recipe won't take much time. The potatoes are baked in the oven. In total, it took me 60 minutes to prepare. Most of the time is spent making even cuts and slicing the fatback. It's best to use potatoes with a proper oval shape. I added a bit of garlic, which made the dish even more aromatic. Serve hot.

1. There's no need to peel the potatoes. It's enough to thoroughly rinse them under warm water, using a regular dish sponge. After drying the potatoes with paper towels, make crosswise cuts, but don't cut all the way through.

2. Then slice the fat and part of the cheese into thin slices. Make sure the fat slices are no wider than the potatoes. Insert a piece of fat into each potato cut. It will look more appetizing if you alternate the fat and cheese when inserting them.

3. Prepare a baking sheet. Line it with parchment paper. Preheat the oven to 180-200 degrees. Bake the potatoes for 40-45 minutes. Check for doneness by carefully piercing a potato with a knife or fork. Remove the baking sheet. Lightly brush each potato with mayonnaise. Grate the cheese finely. Sprinkle the dish with garlic and cheese. Return to the oven until the cheese melts.

4. Remove the potatoes from the oven and sprinkle with chopped parsley. Serve.
