
Potato accordion
Description
The recipe won't take much time. This potato dish looks perfect both on a festive table and during an everyday dinner or lunch. I usually prepare it with bacon (smoked or raw) or ham, but you can also make it simply with butter, fresh herbs, or aromatic spices. For a more appetizing look and extra flavor, I sprinkle it with grated hard cheese. Serve hot.

Step 1

1. I choose potatoes of approximately the same size and oblong shape. I peel them (although young potatoes can be left unpeeled) and wash them thoroughly.

2. Make cuts about 0.5-1 centimeter thick, but do not cut the potato all the way through.

3. I have smoked pork belly with a marbled layer, but you can also use plain fatback. I cut it into pieces about the same thickness as the potato slices.

4. Insert pieces of pork belly into each potato slit, lightly salt. Place the potatoes on a baking sheet lined with foil or parchment paper and bake for about 60 minutes at 200°C. Immediately cover the potatoes with foil to prevent the fat from burning.

5. Grate the hard cheese finely on a fine grater.

6. I take the potatoes out of the oven and sprinkle them with grated hard cheese, then put them back in, this time without covering with foil, for another 10-15 minutes until the cheese melts.

7. I sprinkle the ready baked potato with green onions.
