
Potato pancakes with a lean filling

Prepare the necessary ingredients. Boil the potatoes in their skins beforehand until soft, let them cool slightly, peel and mash into a puree. Add salt, ground black pepper, egg, and flour; mix until smooth. The dough will be very soft.

For the filling, we will need sauerkraut, onion, apple, and prunes. Squeeze the sauerkraut, peel the onion, wash the apple, and soak the prunes in warm water for 15 minutes.

Sauté the onion in heated oil until translucent, add the sauerkraut and simmer over low heat for 10 minutes. Add grated apple and chopped prunes, mix and warm for 1 minute over low heat.

Sprinkle the work surface with flour. Divide the dough into two parts, roll each into a sausage shape, then cut each into 12 pieces. Roll each piece into a flat round.

Place the filling in the center of the flatbread.
