
Potato strudel
Description
An ideal hearty dish for those who do not eat meat or fish. You can prepare a pastry filling even from French fries, mashed potatoes, etc. Be sure to add hard cheese so the dish turns out more aromatic and tasty. Serve chilled or slightly warm.

Prepare the listed ingredients. Use either boiled or raw potatoes. I’m using boiled potatoes.

Pour water and vegetable oil into a deep container, add salt, and stir.

Add the premium-grade wheat flour and knead the dough, reserving a little flour for rolling it out.

Cover the dough ball with a bowl, plastic wrap, or a bag, leaving it undisturbed for 15–20 minutes so that the gluten can activate.

At this time, cut the potatoes into slices. If you peeled them before boiling, then slice them together with the peel. If the root vegetables are raw, first fry the potatoes and only then add the onion. Peel and rinse the onion, and cut half of it into half-rings. Fry everything in a skillet in vegetable oil for about 5–8 minutes until golden brown.

Turn off the heat and let the filling cool slightly. Season it with salt and pepper.

Roll out the dough into a thin sheet and gently stretch it with your hands. Place the fried potatoes on the edge of the dough.

Sprinkle the entire filling on top with finely grated hard cheese of any kind.

Fold over the edges of the dough and roll the piece into a log. Preheat the oven to 180 degrees and bake the strudel for about 30–35 minutes until golden brown. Remember to brush the stretched dough with egg yolk if you want to get a golden crust.
