
Potato lavash
Description
Perfect for the table and with drinks. If you're interested, it can be served warm or chilled.

Step 1

Peel the potatoes and boil until tender, then mash them with a potato masher or blender. Beat an egg into the mashed potatoes and mix well. Wash and chop the mushrooms, then sauté them in a pan with chopped onion. Add the mushrooms and onion to the mash. Cut the lavash into squares about fifteen centimeters across. Spread mashed potatoes on each square, top with tomato slices, and any herbs you like.

Fold the lavash into an envelope so the filling doesn’t fall out. If the lavash has dried out, simply moisten it with water, or it may tear.

Take a clean dry frying pan and pour enough oil into it. The oil should be refined and odorless. If you like, you can use butter instead. Heat the pan over high heat, then reduce the heat to low and place the envelopes on the pan.

Fry them over low heat under a closed lid for five minutes on each side. Then remove the lids and fry again for a few more minutes until a crispy crust forms.
