
Potato Apples
Description
Perfect for the table and with drinks. This hot appetizer is essentially the same potato croquettes, only much healthier since they are not deep-fried. But you can make the “little apples” much more interesting in flavor if you add a filling inside—fried mushrooms or crab sticks make an excellent addition. Serve with greens and sauce.

Prepare the necessary ingredients. Peel the potatoes and rinse them.

Cut the potatoes into cubes and boil them in lightly salted water. Then drain the water completely, add thick sour cream and grated cheese.

Using a blender or potato masher, mash the potatoes until smooth; the puree should be thick. Let the puree cool slightly.

In a convenient bowl, mix breadcrumbs, smoked paprika, and a little black ground pepper. Using a tablespoon, scoop the purée, roll into balls of equal size, and coat them in the breadcrumbs.

Transfer all the prepared ingredients to an ovenproof dish, make a small indentation on top, and later insert a bay leaf into it. Place the dish in an oven preheated to 200 degrees for 10–12 minutes under the top broiler to form a golden crust.

Transfer the potato apples to a flat plate, insert the bay leaves, and serve immediately.
