
Potato pancakes with egg and avocado
Description
Perfect with tea and coffee. This simple, hearty breakfast is ready in just a few minutes. Use Tapatio sauce as the hot sauce in this recipe.

Step 1

1. Peel the potatoes and place them in a bowl of water so they don't discolor. Grate the onion. Slice the avocado. In a medium bowl, mix the grated potatoes, grated onion, 1 tablespoon of olive oil, and a pinch of salt and pepper.

2. Add 1 tablespoon of olive oil to the skillet and heat over high heat. Place the potato mixture onto the skillet, forming 2 pancakes. Cover with a sheet of aluminum foil.

3. After 6-8 minutes, the pancakes should be browned. Add another tablespoon of olive oil to the pan, flip the pancakes, and cook for another 6-8 minutes.

4. Place the potato pancakes on a plate. Garnish with avocado slices on top. Season with salt.

5. In the same skillet, prepare the eggs. Add about 4 tablespoons of water to the skillet, cover with a lid (to create steam), and cook the eggs. Cook for about 3 minutes.

6. Place the eggs on top of the avocado, season with salt and pepper to taste, and add a few drops of hot sauce. Breakfast is ready!
