
Potato pancakes with kefir
Description
Goes wonderfully with tea and coffee. Kefir, mashed potato, flour, eggs, salt and pepper — that’s all it takes for our fritters. The result is fluffy, very delicate-tasting pancakes. We make these fritters savoury; you can also add herbs, cheese or sausage. They’re best served with a sauce or sour cream

Prepare the ingredients. You can use leftover mashed potatoes from the day before or make them fresh—whichever is more convenient for you.

Transfer the mashed potatoes to a bowl and add one large chicken egg.

Then pour kefir into the bowl and add salt and pepper to taste.

Gradually add the wheat flour in portions, stirring the dough constantly with a spoon. Also add the baking soda.

In the end you get a thick batter, like for ordinary pancakes.

Heat a skillet and grease it with vegetable oil, then drop the batter in with a tablespoon. Fry the fritters for 2 minutes on each side.

Remove from the oven and serve warm or cooled.
