Instructions
- 1
Step 1

Place all the necessary ingredients for preparation on the table. Wash the potato tubers under running water.
- 2
Step 2

Place the washed potatoes in their skins into a pot of water and cook until done.
- 3
Step 3

Cool the boiled potatoes and peel off the skin.
- 4
Step 4

Place the potatoes into a large bowl. Mash them into a puree using a potato masher.
- 5
Step 5

Add eggs to the mashed potatoes, add salt. Mix everything with a fork.
- 6
Step 6

Add starch, nutmeg, and Parmesan to the potato mixture.
- 7
Step 7

Mix everything.
- 8
Step 8

Add flour.
- 9
Step 9

Knead the potato dough until it barely sticks to your hands (just a little bit, if at all).
- 10
Step 10

Dust the work surface with flour, place the potato dough on it, dividing it into 4-5 parts for convenience. Roll each part into a "sausage" and cut it with a sharp knife into equal small pieces—gnocchi portions.
- 11
Step 11

Dredge all these preparations in flour, pressing slightly with a fork to shape them.
- 12
Step 12

In a saucepan, bring a small amount of water to a boil and add a portion of the gnocchi dough. Cook over medium heat in boiling water until they float to the surface.
- 13
Step 13

Using a slotted spoon, remove the cooked gnocchi from the water and transfer them to a plate.
- 14
Step 14

Serve at the table.
