Prepare all ingredients.

Wash the potatoes thoroughly, cut them into large slices, and steam until tender. Alternatively, you can cook them in the microwave until soft.

Peel the potatoes and mash them into a puree with a masher. Add the starch. Mix thoroughly.

Divide the resulting mixture into 8 balls. Shape them into flat discs. You can smooth any cracks with damp hands.

Heat a frying pan with vegetable oil over medium heat. Fry the potato pancakes on both sides for 3–4 minutes until golden brown.

Mix soy sauce, mirin, sugar, and starch.

Use paper towels to remove excess oil from the pan. Turn off the stove. Pour in the sauce and wait until it thickens. Dip the potato pancakes in it on both sides.
