
Potato crackers
Description
The bake comes together simply and quickly. You may need more or less flour — it depends on how moist your mashed potatoes are, so adjust the amount yourself. To boost the flavor, you can add spices to the potato dough, but I didn’t add any. Serve warm or chilled. Perfect with tea.

Prepare the ingredients. Peel and wash the potatoes.

Boil the potatoes until tender.

Mash the boiled potatoes with a potato masher until you have a smooth, homogeneous purée.

Add the egg yolk and salt to the mashed potatoes.

Add melted butter and flour.

Knead a soft potato dough that does not stick to your hands. If needed, add a little more flour. Shape the finished dough into a ball, wrap it in plastic wrap, and place it on a refrigerator shelf for 30 minutes.

Then roll out the cooled potato dough on the work surface into a sheet about 2 mm thick.

Cut the sheet of dough into small rectangular pieces. Prick each piece with a fork or a toothpick; you can also brush the crackers with beaten egg. Bake the potato crackers in an oven preheated to 180°C for 20–25 minutes.
