
Potato cutlets with rice
Description
A quick and very delicious dish that takes just half an hour to prepare—potato cutlets with rice. They are visually appealing and highly nutritious. In addition to rice and potatoes, they contain sautéed mushrooms with onions. This recipe is almost vegetarian. It contains no meat or animal fat. Yet, the cutlets turn out to be filling and will make a wonderful addition to a family lunch.

1. Before preparing potato cutlets with rice, peel the potatoes and cut them into cubes. Boil them in slightly salted water. Mash the potatoes. Meanwhile, cook the rice until done.

2. Wash and finely chop the mushrooms. Peel the onion and cut it into small pieces. Place the mushrooms and onion into a frying pan with heated vegetable oil. Cook until all the moisture has completely evaporated, then turn off the heat and let the mixture cool.

3. Combine the cooled potatoes and rice. Add paprika. Add pepper and salt to taste. Mix thoroughly.

4. On a cutting board, spread a thick layer of breadcrumbs. On top of it, place a layer of potatoes and rice. Shape into a patty. In the center, on top, place the fried mushrooms with onions.

5. Form a patty from the mushroom and onion patty. Roll it in breadcrumbs.

6. Heat a frying pan. Pour vegetable oil into it. Once the oil is hot, place the patties in the pan. Fry them on both sides in turn until the sides are nicely browned.

7. The cutlets are ready after 5 minutes. Serve them warm, accompanied by vegetables and fresh herbs.
