
Potato patties with feta cheese
Description
The recipe won't take much time. Feta cheese becomes soft during frying, giving the patties a very tender texture and a pleasant salty taste. To enhance this flavor, serve with fresh sour cream or a yogurt sauce with fresh dill or parsley. Serve hot.

Wash the potatoes thoroughly and boil them in their skins until cooked, which takes about 25 minutes. Then rinse them under cold water and carefully peel off the skins.

In a bowl, mash the potatoes with a potato masher or fork while still warm. Add eggs, 2 tablespoons of flour, salt, and pepper to the same bowl. Grate the feta cheese on a coarse grater and add it to the potatoes. Mix thoroughly to obtain a homogeneous dough.

With your hands, shape the resulting dough into dense patties. To prevent the mixture from sticking to your hands, dust them with flour. Also sprinkle a little flour on the formed patties so they don't stick to the pan when frying.

Pour several tablespoons of vegetable oil into a frying pan and heat it well. Start placing the patties, frying them for 2 minutes on each side. Add more oil to the pan as needed.

Place the cooked patties on a paper towel. This will allow the excess fat to be absorbed by the paper, keeping the patties less greasy and crispy. Serve them warm.
