Potato Baskets with Herring Cream

Description

The method of grinding the herring cream depends on the desired texture of the filling. If you want a smooth mixture, you can blend the ingredients in a blender. If you prefer a less smooth filling, you can run the filling ingredients through a meat grinder fitted with a fine plate. It can be served warm or chilled.

    Prepare the ingredients. Three medium-sized potatoes are enough to make six baskets.

    Wash the potatoes and peel them. Grate the tubers on a coarse grater.

    Squeeze excess moisture from the potato mixture. Add egg, salt, and ground black pepper. You may add any spices and herbs to taste.

    Prepare the baking molds for the baskets. You can use silicone molds; the finished baskets will be easier to remove from them. It is advisable to place a parchment paper circle at the bottom of each metal mold. Divide the potato mixture according to the number of molds. Place a portion of potato in each mold and spread the mixture along the sides and bottom of the molds.

    Bake the baskets in an oven preheated to 190-200°C for 30-35 minutes, until the potato is golden. Cool the baskets and remove them from the mold.

    While the baskets are baking, prepare the ingredients for the herring cream. It is best to use lightly salted herring. Boil the carrots in advance until tender and let them cool.
