
Potato sausages with ham
Description
The recipe won't take much time. For such sausages, it's better to choose starchy potato varieties, as they hold the dough shape better. Instead of ham, you can add mushrooms or cooked meat. Overall, the dish is very tasty and can be served with any sauce, whether sour cream, ketchup, spicy or garlic sauce. Serve hot.

Boil the potatoes in their skins, then cool and grate on a medium "cheese" grater. Add finely chopped or grated ham (I used chopped ham and boiled-smoked pork belly), grated cheese, and beat in an egg.

Add flour and starch, spices, and season with salt and pepper to taste.

Knead a pliable dough. Add a little more flour if necessary. Potatoes vary everywhere, so it's difficult to guess the exact amount. Add flour gradually, checking the result.

Next, you can dust the work surface with flour, but I prefer to grease it with oil, as well as my hands. Take a portion of the dough and roll it into a long sausage about one and a half fingers thick. Coil it into a spiral and pierce it with skewers—one or two.

Heat a little oil in a skillet and fry the sausages on both sides until golden brown. Transfer the cooked sausages to paper towels to remove excess oil.

Serve the sausages hot, with homemade pickles or sour cream.
