
Potato dumplings with cheese

1. Wash the potatoes under water, carefully peel them, cut into small cubes and boil in boiling water until fully cooked.

2. Place the feta cheese into a separate bowl. For example, I used 2 bowls because I was making filling with herbs and without. Gently mash the feta with a fork until there are no lumps. If you are making the herb filling, wash the herbs, finely chop them, then add to the feta and mix well.

3. Knead the dough. To do this, place the cooked potatoes into a bowl and mash them into a puree, making sure there are no lumps. Add eggs, flour, salt, and black ground pepper to taste. Mix everything well and knead the dough for about 5–7 minutes.

4. Roll out the resulting dough to a medium thickness—not too thick, but not too thin—so the dumplings don't fall apart. Form round circles from the dough, place a portion of feta filling in the center, then seal the edges to form balls.

5. Place the pot with water on the stove. When the water boils, add the potato dumplings with feta cheese. Cook for about 5 minutes.

6. Remove the quenelles from the water, serve hot, garnishing the plate with sprigs of fresh herbs.
