
Potato nests with minced meat

Peel the potatoes and cut them into cubes so they cook faster. Rinse with water and place in a pot. Cover with clean water and put on the stove. Cook until fully done, slightly salting the water.

Place the minced meat into a bowl, add soy sauce, chopped herbs, finely chopped onion and garlic. Season with pepper and salt, and add a little breadcrumbs. In a separate bowl, beat a raw chicken egg with a fork, then pour half of the egg mixture into the bowl with the minced meat.

Thoroughly mix all the ingredients. The mixture should be dense and elastic. Roll it into small meatball-like balls. They should be small in size, no larger than a walnut.

Pour a little vegetable oil into a frying pan. You can use sunflower or olive oil. Heat it well. Then fry the meatballs on high heat on all sides until they sear and turn golden brown.

Let the boiled potatoes cool, then drain off the water. Transfer them to a bowl and mash with a potato masher. Add a raw egg, spices, flour, and salt to the mashed potatoes. Mix thoroughly until you get a kind of potato dough.

Place the potato dough patties, shaped by hand, onto parchment paper for baking. Put a meatball on top of each patty and gently press them into the dough. Brush the nests with the remaining raw egg, then bake in the oven at 180 degrees Celsius for twenty minutes.
