
French-style mashed potatoes
Description
The recipe won't take much time. This delicate purée is perfect alongside a similarly tender meat or fish dish. It also pairs well with fresh vegetable salads. For example, I like to serve it with roasted eggplant. I absolutely love this combination! Experiment and try different variations. Serve hot.

Step 1
Wash the potatoes, peel them, and cut into medium pieces. Place in a pot with water and put on the stove. After boiling, season with salt to taste and cook over medium heat until tender.

Meanwhile, peel and press the garlic. Pour milk into a separate saucepan, add garlic, bay leaf, and thyme. Place over heat, bring to a boil. Remove from heat, cover with a lid, and let steep for 10-15 minutes.

Drain the water from the cooked potatoes, add chopped butter, and start mashing.

Carefully remove the thyme sprig and bay leaf from the milk. Place it back on the heat and bring to a boil. Gradually pour it into the potatoes in a thin stream, continuing to mash.

The puree will turn out very aromatic and incredibly tender.
