
Potato casserole with cod liver
Description
Delicious baked goods for the whole family. You can serve a golden-brown potato casserole with sour cream or thick yogurt of any fat content. The dish is unusual in that the filling is cod liver—a fairly high‑calorie but very nourishing food for children and adults alike.

Prepare the listed ingredients. Peel the potatoes and onion, then rinse them in water.

Slice the potato into slices in a saucepan, add salt and bay leaves to the same pot, pour in hot water, and put the saucepan on the stove.

Boil until done, about 25 minutes. Pour half of the liquid into a cup or bowl and remove the bay leaves.

Press the potatoes through a special ricer, adding some of the drained cooking liquid if needed. Fold a chicken egg white into the mash—it is required so the casserole keeps its shape.

Dice the onion and fry in vegetable oil in a pan for about 3–4 minutes until golden brown. Brush a baking dish with vegetable oil.

Spread half of the mashed potatoes into the dish, then add the fried onions on top.

Arrange the cod liver pieces, shaking off excess oil.

Spread the remaining mashed potato on top, then grate hard cheese over it. Place the baking dish in an oven preheated to 180°C.
