
Vegetable gratin with potatoes
Description

Peel the potatoes, cover with water, and put on the stove to boil until done. Don't forget to add salt.

Cut the broccoli into florets and place in boiling water for 3-4 minutes. Then remove and immediately plunge into ice water to preserve its color. After that, transfer to a colander and let all the liquid drain off.

Peel the onion and carrot. Slice the onion into half-rings, and grate the carrot.

Pour vegetable oil into a frying pan, heat it up, and sauté the onion and carrot until the carrot becomes soft. Add the pepper cut into small cubes and sauté for another 1.5–2 minutes.

Cut the broccoli into small pieces, add to the vegetables and sauté for about 1.5 minutes.

Now add 100 ml of cream, season with salt to taste, and add ground pepper. As soon as the cream begins to thicken, stir in the finely chopped herbs. Remove the vegetables from the heat.

The potatoes are cooked, drain the water. Add warmed cream to the potatoes and make mashed potatoes. Add flour to the mashed potatoes and mix well once again.

Grease the baking dish with butter and spread half of the mashed potatoes, leveling it out, then place the vegetables on top.

And on top — the remaining mashed potatoes. Smooth out the top layer. You can leave the surface flat, or you can decorate it. You can also sprinkle the casserole with grated cheese.

Bake the dish in a preheated oven at 200 degrees Celsius for about 25–30 minutes, until golden brown. Sprinkle with herbs and serve.
