
Potato pizza with rosemary
Description
The pastry is simple and quick to prepare. Thanks to the potatoes, the pizza turns out incredibly filling.

1. Preheat the oven to 260 degrees with the rack in the middle position. In a medium bowl, combine water and salt, stirring until the salt dissolves. Peel and slice the potatoes into very thin slices, about 1.5 mm thick. Place the potato slices into the salted water to prevent oxidation and browning. Soak them in the brine for about an hour.

2. Drain the potatoes in a colander and squeeze out as much water as possible by hand. Then dry the potato slices.

3. In a medium bowl, mix together potato slices, chopped onion, black pepper, and olive oil.

4. Spread the potato mixture evenly over the entire surface of the dough. Place a little more filling around the edges of the dough, as the outer parts usually cook faster. Sprinkle rosemary evenly over the top.

5. Bake the pizza in the oven for 30 to 35 minutes, until golden brown. At the 20-minute mark, sprinkle the pizza with grated Parmesan cheese and continue baking. Serve the pizza hot or at room temperature.
