
Potato Peel
Description
Perfect with meals and drinks. Before you start cooking, wash the potatoes thoroughly—preferably with a scrubber—to remove all dirt. You can use cheese, meat, bacon, and herbs to add variety to the flavor of plain potato skins. You can bake the potato skins in the oven or on the grill. Serve the appetizer at the table.

1. Boil or bake whole potatoes (approximately the same size). Cut the cooked potatoes in half and scoop out the flesh, leaving the skin with a thin layer of flesh.

2. Place the halves on a preheated grill or oven rack, brush with vegetable oil, and cook for 7–10 minutes on each side.

3. Remove the halves and transfer them to the counter.

4. Fry the bacon in a dry preheated skillet for 10 minutes, then transfer to a paper towel and, once cooled, chop finely. Place the skins on a baking sheet and sprinkle with salt and pepper, add a little bacon and grated cheese. Cook for about 2 minutes.

5. Garnish the dish with sour cream and chopped green onions; serve immediately.
