
Potato focaccia
Description
Delicious baked treat for the whole family. If you're curious, serve warm or chilled. Perfect with tea.

Step 1

If you don't already have mashed potatoes ready, we'll make it right now. First, peel and rinse the potatoes under water. Boil them until cooked.

Then we start making the mashed potatoes (mash the potatoes while adding milk). The consistency of our mashed potatoes should be medium (neither thick nor thin).

Now let's dissolve the yeast. Take 1/3 cup of hot water and add sugar to it. Stir and let the water cool down to 40 degrees. It should be warm. Once the water reaches the desired temperature, add the yeast to it. Mix well and set aside for 15–20 minutes.

Now take a large and deep container. Put the mashed potatoes, yeast, and warm water (the remaining 2/3 cup) into it. Add salt. Start kneading the dough, gradually adding flour a little at a time. At the end, add oil and knead the dough again.

Transfer the resulting dough to a container greased with olive oil, cover with plastic wrap, and let it sit in a warm place for about an hour. It will double in size.

After the required time has passed, take out the dough and knead it by hand. Shape it into a focaccia. It usually resembles a flatbread, but you can experiment and bake rolls, buns, or other shapes if desired. Place the future focaccia onto a greased baking tray, cover it again with plastic wrap, and let it rest for about 40 minutes. After that, make indentations on the surface of the dough (as shown in the photo), brush the dough with olive oil, and optionally sprinkle with salt and aromatic herbs to taste.

Bake in a preheated oven at 220 degrees for approximately 20 minutes.
