
Baked Potatoes with Mushrooms
Description
This is far from a classic recipe for baked potatoes with mushrooms, but original ideas give this dish a whole new flavor. 1. Wash and dry the potatoes. Prick them slightly with a fork while still in their skins, then thoroughly brush with olive oil. 2. Place the potatoes on the oven rack. Put a baking sheet underneath to catch any excess oil. 3. Peel the onion and slice it into half-rings. Place it in a frying pan and sauté until golden. 4. Wash the mushrooms, slice them, and add to the pan with the onion. Once the mushrooms are fried through, remove from heat and let cool slightly. 5. When the potatoes have a crispy crust and a fork easily pierces through, remove them from the oven. Let them cool, then cut each in half. Carefully scoop out the center with a teaspoon, leaving about 0.5 cm of potato around the edges. 6. Mix the scooped-out potato with the sautéed mushrooms and add butter. 7. Stuff the potato halves with this mixture and return to the oven for about 15 minutes, until golden peaks form. 8.
