
Potatoes baked with chanterelles
Description
The recipe won't take much time. Baked potatoes with chanterelles are quite simple to prepare. First, we cook the mushrooms and potatoes separately, combining them only at the very end. We sauté the mushrooms in a skillet with a generous amount of spices (the curry helps the chanterelles retain their beautiful orange color), while the young potatoes are baked in the oven with cumin and soy sauce. The result is fragrant and delicious. Serve hot.

Cut the potatoes into wedges. Thoroughly rinse the chanterelles under running water.

Place the sliced potatoes into a greased baking dish. Season the potatoes with salt, sprinkle with cumin, add soy sauce, and bake in a preheated oven.

Heat a frying pan. Pour olive oil into it, add curry and coriander. Fry the spices, then add the chanterelles.

Chanterelles should be simmered in a frying pan. The mushrooms release enough liquid to braise them in.

Simmer the mushrooms for about 20–25 minutes. If the water starts to evaporate, gradually add more. Add chopped garlic in large pieces at the very end. Season with salt.

Remove the cooked potatoes from the oven. Place the prepared chanterelles on top of the potatoes and return to the oven for 5-10 minutes.

By this time, the mushrooms and potatoes will have slightly smoked and acquired an incredibly appetizing appearance.
