Description
This recipe is an alternative to regular baked potatoes, which might have already gotten boring. The secret lies in the seasonings, and they can be varied. You can simply season your baked potatoes with herbs or sprinkle them with cheese, or you can let your imagination run wild.

1. Preheat the oven to 170 degrees. The only difficulty in preparing potato hedgehogs might be cutting them. Make cuts along the entire length of the potato, spaced 1 cm apart. Cut through only 2/3 of the potato's depth so that it stays intact.

2. For the garlic seasoning, finely slice the rosemary and garlic. Grate the lemon zest. Mix all ingredients (including olive oil) in a bowl. Pour the mixture over two sliced potatoes, making sure it gets between the cuts, especially the garlic.

3. To make the herb seasoning, melt the butter in a pan, add the herbs, and stir well. Pour the mixture over the remaining two potatoes, making sure it gets between the cuts.

4. Place the potatoes on a baking sheet and bake in the oven for 1 hour and 10 minutes. The exact cooking time will depend on the type and size of the potatoes. When the potatoes are done, turn on the broiler for 3 minutes to form a crust. Serve as a side dish to any meal.
