
Potatoes with eggs
Description
Serve this dish for breakfast, lunch, or dinner. Spices such as ginger and curry add a spicy flavor. It is best eaten hot, immediately after cooking. Serve it directly in the skillet or portioned onto plates. Optionally, you can add meat, sausage, smoked meats, and various vegetables.

1. Wash the potatoes and cut them into small cubes.

2. Place the potatoes in a pot, cover with water, put on the stove, bring to a boil and cook for another 5-10 minutes until done. The cooked potatoes should be soft and easily pierced with a fork.

3. Peel the garlic and ginger, grate them on a fine grater (you can simply press the garlic using a garlic press). Add olive oil to a skillet, heat over low heat, then add the garlic and ginger. Cook for 2–3 minutes until fragrant.

4. Add curry to the pan and mix.

5. Add the tomato sauce to the pan, increase the heat to medium, and season with salt to taste.

6. Add the potatoes to the skillet with the heated tomato sauce. If the mixture is too thick, add 1-2 tablespoons of water.

7. Make 4 indentations in the skillet and crack 1 egg into each indentation. Cover the skillet with a lid and cook for 6-10 minutes, depending on your preferred doneness of the eggs.

8. Wash the cilantro and chop coarsely, sprinkle the dish with the herbs and serve.
