
Potatoes with bacon
Description
The recipe won't take much time. Bacon gives this potato side dish a pleasant smoky flavor. The leftover bacon fat can be stored in the refrigerator for frying vegetables later. Serve hot.

1. Heat a large skillet over medium heat. Add the bacon strips and cook until done, until the bacon turns brown. Drain all the fat from the skillet, leaving 2 tablespoons of fat. Let the bacon cool and chop it.

2. Cut the peeled potatoes in half and place them in a large pot with water, making sure the water completely covers the potatoes. Bring to a boil over medium heat, then reduce the heat to low and simmer for 10 to 12 minutes. Drain the potatoes in a colander and rinse under cold water. Cut the cooled potatoes into 1 cm cubes.

3. Heat the remaining fat in the skillet with 1 tablespoon of butter. Add the diced onion and cook for about 5 minutes, until softened.

4. Then add diced sweet pepper and cook for 2 to 3 minutes.

5. Add thyme, salt, pepper, and sliced potatoes. Mix all ingredients together and cook for 10-15 minutes, stirring occasionally.
