
Lyonnaise potatoes
Description
The dish is prepared without unnecessary complications. This recipe will help diversify your table and eliminate boring boiled potatoes. Lyonnaise-style potatoes will add appeal to any dish. And if you add ham and sweet red pepper, sprinkle with grated cheese, and place it under the grill for a few minutes, you'll get a dish worthy of a king. Serve the finished dish at the table.

1. Peel the potatoes and boil for 20 minutes, until cooked but still slightly firm. Cool under cold running water and slice into rounds.

2. While the potatoes are boiling, peel the onion and finely chop it. Heat 2 tbsp of olive oil in a frying pan over medium heat, add the chopped onion and cook until it turns golden brown, about 10 minutes. Remember to stir occasionally to ensure even cooking.

3. Remove the fried onions from the pan, add the remaining two tablespoons of olive oil and the potatoes. If your pan is not large enough, you can fry the potatoes in two batches. Lightly season the potatoes with salt and pepper and cook until golden brown, turning occasionally to ensure even browning on all sides (10–15 minutes).

4. When the potatoes turn golden brown, add the onion to the pan and mix. Cook for another 3 minutes. Place the Lyonnaise potatoes on a serving dish and garnish with parsley.
