Fried potatoes
Description
The dish is prepared without unnecessary complications. Fried potatoes are a very popular and common side dish. It is universal, simple, and always available. Choose medium-cooking potato varieties for frying, as they hold their shape well. Use pans with thick bottoms or thick-walled enameled pots. Serve fried potatoes with pickled cucumbers, tomatoes, marinated mushrooms, cabbage salads, fresh herbs, various meat dishes, etc. The ready dish can be served at the table.

Step 1

Ingredients.

Step 2

The potatoes need to be peeled and first cut into longitudinal slices about 0.5–1 cm thick.
- 3
Step 3

Then cut each slice into thin strips, like French fries.
- 4
Step 4

Soak the sliced potatoes in cold water for 5-10 minutes to remove excess starch.
- 5
Step 5

Then be sure to dry the potatoes with a paper towel—otherwise, you'll splatter the entire kitchen.
- 6
Step 6

Finely chop half an onion.
- 7
Step 7

Melt butter in a skillet, add finely chopped onion.
- 8
Step 8

Stirring, fry until golden brown.
- 9
Step 9

Then add the potatoes and vegetable oil to the pan.
- 10
Step 10

Mix.
- 11
Step 11

Cover with a lid and cook over high heat for about 5 minutes.
- 12
Step 12

Then reduce the heat to medium and cook the potatoes for about 15 more minutes, stirring every 3-4 minutes.
- 13
Step 13

When the potatoes are almost cooked, you can add salt. I don't recommend salting at the beginning of cooking—the potatoes will fall apart and release all their juices, becoming dry.
- 14
Step 14

Taste a large piece of potato to check if it's done; if ready, remove from heat.
