
Potatoes
Description
The recipe won't take much time. Duchess Potatoes are an original way to serve regular mashed potatoes and an impressive side dish for a festive table. You can prepare the potato mixture in advance and store it in the refrigerator, then bake it just before serving. Serve hot.

1. Boil the potatoes beforehand until fully cooked. Cut into cubes. Preheat the oven to 190 degrees. Place the boiled potatoes on a baking sheet and put into the oven for 10-15 minutes to slightly dry them out.

2. Remove the potatoes from the oven and mash until smooth, like purée. Let cool in a bowl for 5 minutes. Add egg yolks, butter, a couple pinches of salt, a pinch of pepper, a pinch of nutmeg, and 3/4 cup of cream.

3. Mix using a rubber spatula. Add additional salt, pepper, and nutmeg to taste.

4. Place the potato mixture into a large pastry bag fitted with a star-shaped tip and pipe the mashed potatoes onto a baking sheet in a spiral motion.

5. Beat 1 egg with 1/2 cup of heavy cream and gently brush the mixture onto the potatoes using a brush. This will be much easier if you first place the potatoes in the refrigerator for about half an hour.

6. Bake the potatoes in the oven at 190°C until golden brown at the edges. Serve on a large plate.
