
Potato
Description
At first glance, this dish might be mistaken for donuts or choux pastry balls. This potato dish is an excellent alternative to the usual boiled or fried potatoes or mashed potatoes. These potato balls are soft on the inside and crispy and golden on the outside. They can be served with any sauce, for example, cheese sauce.

Peel the potatoes and cut them into pieces, place them in a pot, cover with water, add a pinch of salt, and boil until cooked.

Place the pan over heat, pour in the milk and warm it up. Then add the butter and melt it. Add the flour and vigorously stir with a spatula, cook for a couple of minutes. Season with salt, black pepper, and nutmeg to taste. Turn off the heat and set the pan aside.

Drain the water from the boiled potatoes and mash them into a smooth puree using a blender or by pressing through a sieve.

Into a pan with milk and butter, break the eggs one at a time, mixing each time.

In a deep skillet or saucepan, heat a large amount of oil (as for frying). Combine the puree with the contents of the skillet and mix.

With your hands, shape the mixture into balls and drop them into the heated vegetable oil, frying until golden brown.

Use a slotted spoon to remove the balls and place them on a paper towel to remove excess fat. Serve the potatoes warm.
