
Pork curry with mushrooms
Description
The recipe won't take much time. Curry is very simple to prepare and resembles a stew. To make pork and mushroom curry, we'll need lean pork, mushrooms, potatoes, spinach, and tomatoes—optional. I use a ready-made spice mix that includes curry among other spices; the sauce turns out not too spicy but flavorful. Serve hot.

Prepare all the necessary ingredients.

Rinse the pork and cut into small cubes. Fry for about 5 minutes in oil on a heated skillet.

While the pork is frying, peel and dice the potatoes.

Remove the meat from the pan and set aside. Chop the onion and mushrooms, finely mince the garlic, then add everything to the pan together with the potatoes. Fry for 5-7 minutes.

While the potatoes with mushrooms are frying, prepare the curry sauce in another small saucepan. Melt the butter and add the flour, stirring until thickened.

Add curry and a mix of your favorite spices. Let it cook for a couple of minutes over low heat.

Then add the sour cream or heavy cream, stir and cook for just about 20 more seconds. The sauce is ready.

Transfer the potatoes, meat, mushrooms with onions and garlic to a cauldron, add the sauce, and simmer for 40–60 minutes, until the pork is fully cooked. If you prefer a thinner curry, add water, and also if it starts to stick.

At the end, add the chopped tomatoes and spinach. Simmer for another 10 minutes.

You can confidently serve the finished pork and mushroom curry without a side dish. Or, if you really want, with a light side—such as rice.
