Prepare all the ingredients.

Cut the tofu into cubes. Then coat in starch and fry in oil until crispy on all sides. Set aside on a plate.

Heat vegetable oil in a frying pan. Sauté bay leaf, minced ginger, garlic, and finely chopped chili pepper for a few seconds until fragrant.

Add the onion cut into half-rings and the carrot. Fry for a couple of minutes until golden brown.

Next, add the chopped tomatoes and tomato sauce, and simmer the vegetables for 5 minutes.
