Carpaccio with Shiitake Salad

Mix all marinade ingredients except the meat.

Brown the meat on all sides in olive oil.

Pour on the marinade.

Wrap the meat in plastic wrap and freeze.

Cut the beef into thin strips. Shiitake salad: Ingredients: 1/2 ounce shiitake mushrooms (sliced), 1 carrot (sliced), 1/2 red onion (sliced), 2 bok choy leaves (shredded), 1/4 cup rice, 2 tbsp. wine vinegar, 1 tablespoon soy sauce. Mix the ingredients and refrigerate. Place the salad in the center of the plate. Drizzle with wasabi sauce.
