
Tomato Carpaccio
Description
A tasty appetizer for any gathering. If you recall the traditional recipe for carpaccio, it is traditionally made from raw meat with a sauce, but as often happens, over time this dish and its ingredients have changed quite a lot. Nowadays this Italian appetizer is prepared not only from meat (raw, dried, or cured), but also from fish, mushrooms, vegetables, and fruit. And today I want to share one such recipe with you and tell you about it. The appetizer is ready. Serve right away.

To start with, the tomatoes should of course be washed thoroughly.

Next, they need to be peeled; to make this easier, blanch the tomatoes. Make a cross-shaped cut on each tomato, dip them in boiling water for 2–3 minutes, then transfer them to cold water for a couple of minutes.

Now the skin should peel away from the flesh easily.

Cut out the stem attachment area, then slice the tomatoes into rounds as thin as possible. Arrange them on a plate and drizzle with a tablespoon of olive oil.

Next, rinse the fresh herbs and chop them finely.

Peel and mince the garlic.

Put the garlic in a small bowl, add 2 tablespoons each of olive oil and vinegar, and season with salt and pepper to taste.

Add the herbs and mix everything together; let stand for 3–4 minutes to allow the flavors to absorb.

Now we spread the prepared mixture onto tomato slices and let them soak in for a couple of minutes.
