
Marbled Beef Carpaccio
Description
The appetizer is quick and easy to make. To prepare marble beef carpaccio, you must use premium meat—not old beef, but young beef. There are many carpaccio recipes, but I like the version with raspberry-lemon sauce best of all. Give it a try yourself too. Serve the appetizer at the table.

Step 1

Freeze the baguette, then slice it very thinly, arrange the slices on a baking sheet, and dry them in the oven for 25 minutes at 120°C. I do the same with lavash.

Wash the beef, trim off the membranes, pat dry with a paper towel, and slice into thin strips across the grain.

Place the pieces of meat in a resealable bag or a thin cellophane bag (you can also simply cover them with plastic wrap) and pound until semi-transparent.

In a blender, mix the raspberries, lemon juice, olive oil, and salt.

Begin plating: using a brush, make a stripe on the plate with balsamic cream. Then place the meat on it.

Wash the arugula and mix it with pesto sauce. Drizzle the meat with raspberry sauce and garnish with raspberries; place the arugula on top, and season with pepper and salt to taste.

Before serving, add toasted baguette to the marble beef carpaccio.
