
Carp in the oven
Description
The recipe won't take much time. You can add your favorite spices while cooking. Instead of dill, you can use parsley or fresh basil. Be sure to try cooking carp using this recipe and delight your loved ones with a delicious dish. Serve hot.

Peel the onion, carrot, and garlic cloves, then rinse. Thoroughly wash the tomato and lemon. Rinse the fresh dill under running water.

First, prepare the marinade for the fish. Take a small bowl and pour into it odorless vegetable oil. Add dried oregano to the oil. Press the garlic using a garlic press and add salt.

Mix everything with a teaspoon — the marinade is ready.

Finely chop the onion.

Grate the carrot on a coarse grater.

Pour 3 tbsp of vegetable oil into a frying pan and add chopped onion and carrot. Sauté over low heat, stirring regularly with a spatula until soft.

Now deal with the carp. I have fresh carp, so there's no need to thaw it. Remove the head (you can leave it if desired), cut off the fins, scale the fish, and clean out the abdominal cavity. Rinse the fish thoroughly on all sides with cool water.

Slice half a lemon and a tomato into thin rounds. Finely chop fresh dill.

Place the prepared carp into a suitable container. I used a ceramic baking dish. Pour the marinade over the fish and thoroughly rub it into the fish both outside and inside. Let it sit for 20–30 minutes.

Then tightly stuff the fish's belly with the fried onion and carrot mixture, adding finely chopped dill (you can mix the dill with the sautéed vegetables beforehand). Make thin slits in the fish with a sharp knife and insert thin slices of lemon and tomato into them. Transfer the carp to a baking dish. My carp is already in the dish. Bake in a preheated oven at 180°C for 30–35 minutes.

Transfer the cooked carp to a serving dish and serve.
