Cut off the fins, head, and tail of the fish. Remove the scales and internal organs.

Cut the fish into steaks. Season them with salt and spices to taste. Then place the carp in the refrigerator overnight.

Cut the onion and mushrooms into pieces of any size. I cut them into slices.

Sauté the mushrooms with onions in a heated pan with butter. Cook until the mushrooms are tender.

In a saucepan, melt three tablespoons of butter. Then add three tablespoons of flour and mix thoroughly. When the mixture turns golden, add a small amount of water. Keep stirring—you should get a slightly thick mass. Pour in the lemon juice and cognac, then add the onion and mushrooms. Remove the saucepan from the heat.
