
Korean-Style Carp

Prepare all necessary ingredients. Clean the fish of scales and innards; remove the fins.

Cut the carp into small pieces so they marinate quickly and are easy to eat. Place the fish pieces in a deep bowl, salt them, pour vinegar essence over them, mix thoroughly, and let stand for 15–20 minutes. Then rinse in several changes of water.

Meanwhile, prepare the onion and slice it into thin rings or half-rings if the onion is large.

In a skillet, heat the vegetable oil, add the onion, and sauté until soft. Then remove from the heat and add the paprika. The onion immediately turned appetizingly red and very fragrant.

Add red pepper, coriander, sugar, and sautéed onion with oil to the fish, pour in soy sauce, and mix everything well.

You can cover the bowl with plastic wrap, but I transfer it to a plastic container, cover it with a lid, and put it in the refrigerator for 6–12 hours (usually overnight).
