Prepare all the necessary ingredients. Peel and rinse the onions and mushrooms, and rinse the chicken breast under running water.

Slice the mushrooms into small pieces, not too large, so they are easy to use for stuffing the chicken breasts. Sauté the mushrooms in vegetable oil in a frying pan until fully cooked. Don't forget to add salt.

Cut the chicken breast in half crosswise. At the thickest part (where you made the cut), make an incision inward, being careful not to pierce the breast all the way through.

Fill the pockets with the prepared mushroom filling. Use toothpicks or wooden skewers to secure the edges of the chicken breast, sealing any gaps to prevent the filling from falling out. Season with salt to taste on top.

On top of the pockets, place several thin slices of cheese. As it bakes, the cheese will melt and form a beautiful crust on the surface of the pockets.

Place the onion, sliced into rings, on the bottom of the baking dish. The layer should not be too thick—just enough to cover the bottom.
