Caribbean Shrimp

Description

Perfect with meals and drinks. Shrimp have become so popular that they can be used in first courses, main courses, appetizers, and all kinds of salads. They are not very expensive and are sold in every store. Choose any by size and freshness (frozen, glazed, chilled). For this recipe, it's better to use large shrimp, as they are much easier to eat. The dish is best served already chilled. The appetizer is ready. Serve immediately.

    1. Thaw the frozen shrimp under cold water, peel them, but leave the tails on.

    2. Pour ½ cup of flour onto a plate, dip the shrimp into the flour one at a time, holding them by the tail.

    3. Add ½ cup flour, baking powder, sugar, and a spice mix to taste to a separate bowl. Salt it, pour in beer or sparkling water, and beat in an egg. Mix everything thoroughly.

    4. Dip the shrimp in the batter, holding it by the tail, and shake off excess batter.

    5. Pour coconut flakes onto a plate. After battering, coat the shrimp in coconut flakes, place them on a separate plate, and set aside for 30–60 minutes.

    6. Heat a deep cast-iron or other skillet with enough oil (about 2 cm) over medium heat. When the oil reaches the right temperature, add the shrimp to the skillet in batches of 4–8, depending on the size of the skillet, and fry on both sides until golden brown.

    7. Using a sieve, strain the oil to remove solid particles between batches of shrimp.

    8. Place the prepared shrimp on a rack to drain off the excess oil, let cool, and serve.
