
Carbonara (the simplest recipe)

Place a pot of water over heat and bring to a boil. Salt the water and add the pasta, cook until al dente.

While the pasta is cooking, cut the bacon into small cubes and fry in a pan until golden brown.

Beat the eggs with a whisk until frothy, then add Parmesan cheese, finely grated. Mix well.

When the pasta is cooked, remove it from the pot and transfer it to the frying pan with the bacon. Add 50-70 ml of the pasta cooking water.

Simmer the pasta together with the bacon for about 1 minute, until the water has evaporated. The pasta should absorb the bacon flavor.

Then pour the egg-cheese mixture over the pasta, stirring vigorously until the egg sauce thickens.
