    Place the large egg yolks into a bowl. Grate 40 grams of Parmesan on a fine grater and add to the yolks, season with salt and pepper, then mix well.

    Trim off the hard rind of the pancetta and cut the meat into small cubes.

    Boil the spaghetti in salted water with olive oil until almost cooked.

    Place the peel in a pan and heat it up, peel the garlic and chop it coarsely, add it to the pan, then add the pancetta and cook for 4 minutes.

    Remove the garlic and skin from the pan, add the spaghetti, mix well, and remove the pot from the heat.
